AFTER A NIGHT OF DOUBLE BACON CHEESEBURGERS AND ONION RINGS, I DECIDED WE NEEDED A HEALTHY DINNER OPTION. HERE WAS MY STAB AT SALMON PATTIES OR SALMON “CAKES”

YOU NEED:
8 FRESH SALMON FILLETS
1 RED BELL PEPPER
3 CELERY “STEMS”?
BUNDLE GREEN ONION
1 LARGE CARROT
4 gARLIC CLOVEs
1/2 BUNDLE PARSLEY
2 EGGS
PANKO CRUMBS
ONION POWDER
OLIVE OIL
SALT/PEPPER
BASIL LEAVES
GARLIC SALT

SEASON SALMON IN A LARGE BAKING DISH WITH OLIVE OIL, SALT, PEPPER, ONION POWDER, GARLIC SALT AND BASIL LEAVES.

BAKE @ 375 FOR 20 MIN

WHILE BAKING, DICE AND SAUTE CARROTS, ONIONS, CELERY, RED PEPPER, AND GARLIC. sEASON WITH OLIVE OIL, SALT, PEPPER, ONION POWDER, GARLIC SALT AND BASIL LEAVES.

MIX SAUTEED VEGETABLES IN THE PAN WITH COOKED SALMON. TOSS LIGHTLY.

MIX IN CHOPPED PARSLEY, 2 EGGS AND ONE BAG OF PANKO CRUMBS.

FORM PATTIES (ABOUT 1/2 CUP EACH) DUST WITH REMAINING PANKO CRUMBS AND LIGHTLY BROWN IN A PAN OVER MEDIUM HEAT.
